- 4 Bord Bia Quality Assured eggs
- 85g caster sugar
- 500mls milk
- 225mls cream
- 75mls whiskey
- 1 teasp. freshly grated nutmeg
Separate the eggs into two bowls. Beat the yolks until pale. Reserve 1 tablespoon of sugar and gradually add the rest into the egg yolks and beat until the sugar has dissolved. Add in the milk, cream, whiskey and nutmeg and stir to combine.
In a separate bowl beat the egg whites until they form soft peaks. Add in the reserved sugar and beat for 2-3 minutes until stiff peaks form. Whisk this mixture into the egg yolks. Chill and serve.
